Feed rate is not evaporation capacity
Express feed, concentrate and evaporated water separately, on a consistent mass basis.
Start with conserved non-volatile solids
For a simple steady-state concentration, feed mass flow multiplied by inlet solids mass fraction equals concentrate mass flow multiplied by outlet solids mass fraction. Water removal is the difference between feed and concentrate mass flow.
A worked procurement example
At 1,000 kg/h feed, 12% inlet solids and 60% outlet solids, the non-volatile solids rate is 120 kg/h. The calculated concentrate flow is 200 kg/h and evaporated water is 800 kg/h. This is an illustrative balance, not a rated machine or a guaranteed juice operating point.
State what the calculation leaves out
The tool assumes no added ingredients, no solids lost to vapour or deposits, no reaction and no accumulation. Significant volatile losses, entrainment, multiple feed streams or dilution require a fuller balance. Thermal sizing also requires properties and operating temperatures.
Treat Brix with care
The Brix option uses readings as an approximate solids proxy. For a real food mixture, confirm the relationship between refractive reading and mass solids. A litre per hour value must first be converted with a measured density at the stated temperature; it must not be entered as kg/h.
